Serves: 4

  • 2 ripe (but firm) peaches, quartered
  • 1 tbsp (15 mL) canola or vegetable oil
  • 1 pkg (450 g) ground turkey
  • 2 tbsp (30 mL) chopped fresh basil
  • 1 clove garlic, minced
  • 1/2 tsp (2 mL) each salt and pepper
  • 125g small Ontario brie cheese, cut into 8 slices
  • 4 lettuce leaves

Step One:

In a bowl, toss peach quarters with oil. Place on greased grill over medium-high heat and grill, turning occasionally for about 6 minutes or until grill marked and softened. Remove to a cutting board.

Step Two:

Dice enough of the peaches to make about 1/2 cup (125 mL). Thickly slice remaining peaches and set aside.

Step Three:

In a large bowl, combine turkey, diced peaches, basil, garlic, salt and pepper. Shape into 4 patties. Place on preheated medium grill and cook, turning once for about 12 minutes or until no longer
pink inside. Place 2 slices of brie on each patty; close lid and let stand on grill for 30 seconds to melt.

Step Four - Spiced Tomato Cream Sauce:

Garnish each patty with a lettuce leaf and top with remaining peach slices. Serve immediately!
